Coupez le en 3 tron\u00e7ons.<\/li>\n\n\n\n<li>Pour chaque tron\u00e7on obtenu : enlevez les feuilles abim\u00e9es puis entaillez le dans le sens de la longueur. V\u00e9rifiez qu&rsquo;il n&rsquo;y ait pas de terre entre les feuilles en l&rsquo;effeuillant sous un filet d&rsquo;eau. Lorsque  vous trouvez 3 couches propres successives vous pouvez consid\u00e9rer que le c\u0153ur du poireau est propre. Remettez les feuilles lav\u00e9es autours du tron\u00e7on puis r\u00e9servez dans un panier vapeur.<\/li>\n\n\n\n<li>Dans un panier vapeur d\u00e9part \u00e0 froid : fa\u00eetes cuir les poireaux 30 minutes. <br>La cuisson dans un volume d&rsquo;eau alt\u00e8rera la texture, le go\u00fbt et les qualit\u00e9s nutritionnelles de votre l\u00e9gume. Toutefois, si vous ne pouvez faire autrement, pensez \u00e0 bien les \u00e9gouttez, l&rsquo;eau r\u00e9siduelle entre les feuilles diluerait la vinaigrette et votre plat perdrait en saveur.<\/li>\n\n\n\n<li>M\u00e9langez les ingr\u00e9dients de votre vinaigrette et servez une fois les poireaux ti\u00e9des.<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>INGREDIENTS (1 pers.)
